Prep time: 5 minutes
Cook time: 3–5 minutes
Servings: 2
2 packages ramen-style noodles (discard or save seasoning pack]
2 tbsp peanut butter (creamy works best)
2 tbsp toasted sesame oil
2 tbsp honey
2 tbsp soy sauce (or low-sodium soy sauce, or coconut aminos)
1 tbsp rice vinegar
1/2 tsp garlic powder
Optional: 1–2 tbsp warm water (to adjust sauce consistency)
Boil the noodles: Bring a pot of water to a boil. Add the ramen noodles and cook according to the package directions (typically 3 minutes). Drain well and set aside.
Whisk the sauce: While the noodles cook, add the peanut butter, toasted sesame oil, honey, soy sauce, rice vinegar, and garlic powder into a medium bowl. Whisk until smooth and fully combined. (Note: If the peanut butter is firm, microwave the sauce mixture for 10–15 seconds to help it whisk easily.)
Combine: Add the warm, drained noodles directly into the bowl with the peanut butter sauce. Toss thoroughly until all noodles are evenly coated.
Adjust and serve: If the sauce feels too thick, splash in a tablespoon of warm water and toss again to loosen.
Serve warm or chilled.
Prep time: 5 minutes
Servings: 1-2
2 cups vanilla ice cream
2 tbsp unsweetened cocoa powder (Dutch-processed or natural)
1 pinch fine salt (about 1/8 tsp)
1/4 cup cold milk (adjust for desired thickness)
Coffee Flavor (choose one):
- 1 shot (1 oz / 2 tbsp) cooled decaf espresso
- 3 tbsp strong cold-brewed or chilled decaf coffee
- 1/2 to 1 tsp decaf instant espresso powder
Combine liquids and powders: Add the milk, cocoa powder, salt, and your chosen coffee element (espresso, liquid coffee, or espresso powder) to the blender liquid-first to prevent the powder from sticking to the sides.
Add ice cream: Scoop in the vanilla ice cream on top of the liquid mixture.
Blend: Pulse 2–3 times to break up the ice cream, then blend on medium-high speed for 20 to 30 seconds until completely smooth and thick.
Adjust texture: If the shake is too thick, add an extra tablespoon of milk and blend for 5 seconds. If too thin, add another small scoop of ice cream.
Serve: Pour into a chilled tall glass swirled with optional chocolate syrup, and top with whipped cream!
